Today's recipe is a delicious Chirizo & egg sweet potato hot pot. This is a simple meal to prepare and is ready in under 30 minutes.
Why have we got Sweet potato two weeks on the trott I hear you ask! Sweet Potato holds twice the nutritional value as regular potatoes, bursting with Vitamins A & C and dietary fibre. If you haven't already started to make the potato swap in your diet, this recipe will surely win you over!
This dish is the perfect mix of spicy sausage and sweet, creamy sweet potatoes. All you need is one pan, so there is less mess, less fuss and best of less dishes!
Ingredients
1 large sweet potato diced
1 Handful of Watercrest & Spinach leaves
1/2 chorizo sausage
2 eggs
4 baby corn
1/4 red chilli chopped
1 tsp of coconut oil
Method
Chop Sweet Potato in small cubes and place in a microwaveable oven for 10 minutes.
Meanwhile heat coconut oil in a large pan on a gas ring until melted and place spinach, chorizo and baby corn into the pan to cook.
Once sweet potato is soft and cooked throughout, place into pan with other ingredients and allow to cook for 3-4 minutes.
Crack 2 eggs into the centre of the pan and allow to cook for a further 4 minutes.
Meanwhile Pre heat the Grill in your oven and once eggs are fully cooked, remove pan from the gas and place into the grill to toast for a further 5 minutes.
