Grain Free Paleo Loaf!
This delicious grain free loaf is light and fluffy in texture, based on the traditional wheaten style loaf that we love here in Northern Ireland, only bursting with nutritional goodness. Serve with soups, use for sandwiches or even with a little butter for light evening snack - Paleo friendly and gluten free! Yummy.
Serves: 9-10 slices
Prep time: 15 minutes
Cooking time: 35 minutes, Oven 180C
Ingredients:
- 3/4 cup almond butter
- 5 eggs
- 1/4 cup coconut oil, melted
- 1 tbsp honey
- 1 tsp apple cider vinegar
- 1/2 cup Linwoods Flaxseed
- 3 tbsp coconut flour
- 1 tsp baking soda
- 1/2 tsp salt
Method:
- Preheat the oven to 180 degrees C. Line a loaf pan with parchment paper and in a large bowl, blend the almond butter, eggs, coconut oil, honey, and apple cider vinegar together with a hand blender.
- Then In a separate bowl, mix together Linwoods Flaxseed, coconut flour, baking soda, and salt.
- Mix the dry ingredients into the wet ingredients
- Pour the dough into the lined baking pan.
- Bake for 35 minutes until browned and completely set. You can test this by place a skewer into the bread and removing it, checking that it is clean to assure the bread is baked fully.
- Remove from the oven and allow the loaf to cool in the pan for 10 minutes.
- Store in an airtight container and this bread can last for up to one week. Enjoy
