Healthy Bircher Muesli by The Clever Cook
Breakfast is the most important meal of the day, to kick start the metabolism and to provide you with the right fuel to help you grab your day by the horns! This rich and creamy delicious bowl of goodness is the gold standard of breakfasts - made with nuts, seeds, rolled oats, almond milk, Greek yogurt, shredded apple and topped with tasty fruits! Yummy Bowl this up the night before to soak, then add yogurt, cinnamon and tasty fruit in the morning to set you on your way to a healthy start. This is best eaten cold and fresh from the fridge.
Ingredients:
*Night before*
- 1/2 Cup of rolled oats
- 1 tbsp of sun flower seeds
- 1 small handful of hazelnuts
- 1 cup of unsweetened almond milk
- 1 tsp of vanilla extract
- 1 tbsp of pure maple syrup
*Next Morning*
- 2 dollops of greek yogurt/ can use soy alternative for dairy free option
- 1 tbsp of cinnamon
- shredded apple
- shredded coconut, pomegranate seeds, berries
Method:
Place oats, pumpkin seeds and hazelnuts in a bowl and top with almond milk.
Stir in maple syrup and vanilla extract.
Place in the fridge covered overnight or for 1 hour.
Remove and sprinkle with cinnamon and pour in yogurt
Stir together and then add in grated apple.
Stir thoroughly and top with mixed fruit
I suggest- pomegranate, toasted coconut and berries and a sprinkle of nuts!
