Healthy Christmas Cinnamon Biscuits
The smell of warm cinnamon in my kitchen has filled my entire house and set everyone in the Christmas spirit! The buscuits are definitely one to put on your Christmas activity list if you are eager to get in the festive spirit! These little shortbread Christmas trees are gluten free, free from added sugar and most importantly taste delicious!
This recipe can be made with all hands on deck, as kids will love helping to use the Christmas shapes. - Gingerbread men, Christmas Bells or Christmas trees, you can find all sorts of fun shaped cutters in most bargain stores! Perfect for dipping into some hot milk, or even as a healthier treat for Santa!
Ingredients
2 3/4 Cups of Almond flour (280g)
1 teaspoon of ground cinnamon
1/4 teaspoon of ground nut meg
1/2 teaspoon of gluten free baking powder
4 fresh soft pitted dates
50ml of melted coconut oil
40g of honey or maple syrup
1 teaspoon of vanilla bean extract
1 egg white
Method
Combine almond flour, dates and spices in a food processor and process until mix is entirely crumbly.
Add coconut oil, honey, vanilla and egg white.
Process again until a soft sticky dough forms.
Remove the doughy mix and flatten out using the back of a spoon on a sheet of baking paper and then place another sheet on top when flattened out.
Freeze for 1 hour to allow dough to harden.
Once removed, preheat oven to 180C.
Now for the fun part- cut out shapes with your Christmas themed cutter and then one by one place cookies carefully on a baking tray.
Place in the oven for 10-12 minutes.
Serve once cooled and enjoy!!
