Pesto Courgette Spaghetti
Courgette Spaghetti is the new kid on the block and is a perfect way to cut some calories while not feeling like your missing out. This dish is something that everyone can enjoy (even those who fear all things green) - The much loved Pesto Chicken Pasta just got a healthy upgrade
- Ingredients (serves 2)
- 2 large chicken breast
- 1 cup of cashew nuts
- 1 container of courgette spaghetti (can be bought in Asda, Tescos & M&S)
- 1 clove of crushed garlic
- 1 head of broccoli or 1 handful of spinach (optional)
- 2 tbsp of green pesto (reduced fat option available)
Method
- Slice chicken into long thin strips and cook in a hot pan.
- Meanwhile, pop the cashew nuts into a pre-heated oven at 180C to toast to a golden brown. This should only take 4-8 minutes.
- In a Wok- add the courgette, pesto and toasted cashew nuts and place on a medium heat.
- Once the chicken is cooked through add to wok.
- Stir all together and add the spinach or broccoli.
- Once piping hot throughout - serve into bowls. Tuck in and enjoy!
