Mediterranean Goodness Bowl by the Clever Cook.
Do you ever run out of dinner ideas? Looking for something tasty yet healthy, that dosent require hours of chopping and peeling? This roasted Mediterranean salad bowl has the taste factor and can be popped into a wholemeal tortilla wrap for a more filling dinner, or tossed into a bowl for a lighter lunch!
- What's more its high in protein and is two of your 5 a day with mixed peppers, red onion, courgette and tomatoes with a little drizzle of extra virgin olive oil. Delicious!
- Simply chop some mixed peppers, courgettes, red onion and slice tomato and pop onto a roasting tray. Drizzle with extra virgin olive oil and roast for 30 mins in a oven at 180 C.
- Meanwhile, cut some chicken into cubes and place on a hot griddle plan.
- Once cooked through add chopped chorizo and then add some sliced halloumi cheese and cook until it turns a golden brown.
- Remove the roasted veggies from the oven and place in a bowl and top off with mixed chicken, chorizo and halloumi.
- Tuck in and enjoy!
