Sticky Popcorn Protein Balls by The Clever Cook
The kids are back at school this week and what better way to make the bitter, sweet than with these little balls of heaven.
Made with just a few ingredients, these can be made in large batches and popped in the freezer to have lunch box ready all through the week!
These little balls are free from refined sugars, harmful sweeteners, high in protein and healthy fats.. Better still- everyone can get involved in the baking process- including the dishes! haha
Ingredients
- 2 bags of Melcalfes low calorie/sugar popcorn
- 3 heaped tbsp of organic peanut butter
- 3 tbsp of honey
- 2 tbsp of pistachios
- 3 tbsp of almonds
- 2 tbsp of unsweetened coconut
- Then 1 scoop of whey vanilla protein (can be made without)
Method
Place popcorn, mixed nuts, protein powder and unsweetened coconut in a large bowl.
Stir together well and meanwhile add peanut butter and honey to a small pot and place on a medium heat.
Stir frequently until a smooth caramel like substance forms.
Slowly pour the liquid into the bowl of dry ingredients and combine well together.
Once mixed thoroughly together, begin to roll into small bite sized balls.
Place in the freezer to set for 15 minutes and store in a sealed container and let the whole family enjoy!
