Coconut Flour Banana Bread by The Clever Cook
This little loaf is easy to make, healthy and has no butter or refined sugar added. (YAY). The ingredients leave it perfectly moist and sweet, making this little recipe one to store away for keepsake! Why Bake with Coconut flour?
Coconut flour is extremely high in fiber; about 5-6 grams per 2 tablespoons. It also contains healthy fats and is considerably lower in digestible carbs than most other flours and can be bought now in Sainsburys, Tescos and most health shops. Delicious!
Ingredients:
- 3 medium ripe bananas, mashed (about 1 1/4 cups mashed banana)
- 1 teaspoon vanilla extract
- 1/4 cup almond butter
- 2 eggs, at room temperature
- 1/2 cup coconut flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips OR cocoa nibs
Method:
Preheat the oven to 180 C and line a bread tin with baking paper. In a large bowl with an electric mixer, combine bananas, vanilla and almond butter; mix until well combined, smooth and creamy.
Then slowly mix in the 2 eggs, one at a time until fully combined.
Slowly then add in coconut flour, baking soda, baking powder, cinnamon and salt; mix again until just combined
Fold in the dark chocolate chips or cocoa nibs and pour into baking tin.
Bake for 30-40 minutes until golden brown.
Allow to cool before serving toasted with some butter or nut butter!
