Welcome to our food recipes

We have been thinking about starting a recipe/ food blog for a while and not to follow trend, well OK, to follow trend, we bring you our biweekly food recipes, that are quick, healthy ( which is all the rage) & hopefully delicious. For our first recipe; enjoyed writing that, we bring you Bacon & Sweet Potato Soup. The NI nights are now shorter, getting colder, we are predicting snow very soon and so what's more satisfying than a hearty soup to warm the cockles of your heart?

So, down to the recipe. This recipe takes 23:46 secs, which whips, 'Jamie's 30 minutes meals' by an impressive 6 minutes and 14 seconds. But, hey who is counting.This thick and deliciously creamy soup recipe will have the whole family going back for seconds, that's for sure!

Ingredients

350g of diced sweet potato
5 slices of bacon
400ml of reduced fat coconut milk
1 low salt chicken stock cube
2 jalapeno peppers, chopped.
3 cloves of crushed garlic
2 tsp of paprika

Sea Salt to season or chopped thyme

 
Method

Step 1: Dice sweet potato into small cubes and place in a microwaveable dish and heat on full power for 6-8 minutes until soft throughout.



Step 2: Brown the chopped bacon with the garlic, paprika and jalapeños on a gas ring at medium heat.

Step 3: Add the cooked sweet potato to the pan and allow flavours to be absorbed, stirring occasionally for 4-5 minutes. A natural gas cooker allows a perfect controllable heat. *Shameless plug!

Step 4: Now place contents of the pan into a medium sized pot and pour in coconut milk.

Step 5: Allow contents to simmer on a medium heat for 10 minutes before pouring into a food processor or using a hand held blender, blend until a thick creamy texture.

Step 6: Serve with fresh wheaten bread and Enjoy!
